0:05
you’re a fan of beef jerky and on
0:07
today’s video i’m going to show you just
0:09
how simple it is to make some smoky and
0:11
delicious beef jerky stay tuned
0:15
[Music]
0:33
all right let’s get started on this beef
0:35
jerky recipe by the way i’m using a
0:37
jerky kit from pia seasoning and this
0:39
flavor is cracked pepper and garlic and
0:42
each box will do 15 pounds of meat all
0:44
right so inside each box you’re gonna
0:46
get six different packages three cures
0:48
and three seasoning packages okay now
0:51
each kit will do five pounds i’m gonna
0:53
be using ten pounds of beef today so i’m
0:55
using two of each i’m just gonna put
0:57
this one aside
0:58
and save that for a later date
1:01
all right so i have a bowl right here
1:02
i’m just gonna open up two of these
1:03
seasoning packages
1:05
and dump them in
1:08
and also two of the cure packages
1:15
all right i have one cup of ice cold
1:17
water
1:18
just throw it in there
1:21
and give it a good mix
1:28
you can definitely smell and see the
1:30
amount of black pepper that’s inside
1:31
this jerky kit
1:33
all right so that’s good i’m just going
1:34
to move this aside i’m going to grab the
1:36
beef and i’ll bring you guys right back
1:38
all right so i’m starting with 10 pounds
1:39
of beef i have round and i’m just going
1:41
to move one aside
1:43
and we’re going to trim this one up
1:44
right here
1:45
so when it comes to beef jerky you want
1:47
to make sure you use a piece of meat
1:48
that’s pretty lean not a whole lot of
1:51
fat now this has fat on the outside
1:53
which i’m going to trim but there’s very
1:55
little fat on the inside
1:57
so the fat can go rancid on you
2:00
when you’re making beef jerky okay so
2:01
that’s why you want to
2:02
use a piece of meat that’s really lean
2:06
on the inside
2:09
and the beautiful thing about this v5
2:11
round
2:12
is that the fat cap is just on the
2:14
outside
2:19
real simple to trim
2:20
[Music]
2:29
all right so i’m just going to trim this
2:30
piece off right here
2:32
save that for something later now if you
2:34
have a little bit of silver skin
2:36
it’s up to you you can leave it on
2:38
or take it off it’s not going to bother
2:41
the overall flavor of that beef jerky
2:45
i’m going to take most of it off though
2:54
you guys have been watching my channel
2:55
for a long time
2:56
you guys know that i love to trim meats
3:00
it’s very relaxing
3:03
to trim the fat off of meat
3:06
really enjoy it
3:23
all right so i’ve got the b5 round
3:24
completely trimmed up and i still have a
3:26
little bit of fat but i’m not too
3:27
worried about that now one of the nice
3:29
things about using b5 round is that the
3:30
grains run long ways like this so you
3:33
can simply cut your beef jerky strips
3:36
this way right here now one of the
3:38
things that you can do to make your beef
3:39
jerky a little bit longer is to cut the
3:42
beef jerky on the bias kind of like this
3:44
let me show you this here real quick so
3:46
you want to cut it at an angle you’re
3:48
still cutting against the grain
3:51
okay
3:52
but now you just have a longer piece so
3:54
at this point you can just come in here
3:56
and i want about
3:58
an eighth to a quarter of an inch thick
4:00
beef jerky
4:02
so just come in here
4:04
and take out your slice
4:08
okay just like that one thing you have
4:10
to remember is that once you’re done
4:12
with your beef jerky this is going to
4:13
shrink to about half of this size and
4:15
even the thickness so if you have a
4:17
quarter of an inch of meat you’re going
4:19
to end up with about an eighth of an
4:20
inch
4:21
of beef jerky all right so i’m just
4:23
going to continue to take some thin
4:24
strips
4:25
of this beefie around
4:27
trim up the other one
4:29
and i’ll bring you guys right back
4:31
all right so i’ve got both eyebrows
4:32
completely cut up now i like my beef
4:34
jerky a little bit on the thick side a
4:36
lot of people do make beef jerky and
4:38
it’s real thin it gets too crunchy i
4:40
don’t like my beef jerky that way so i
4:42
do have some thicker pieces in here so
4:44
i’m just going to move all this into a
4:45
bowl
4:48
all right i’m just going to pour out my
4:49
marinade
4:50
into a bowl right here because i want to
4:52
make two different flavored batches
4:55
all right so i’m going to split up the
4:56
meat
4:58
as close as possible
5:00
all right that looks about 50 50 to me
5:03
so i’m going to pour out half of my
5:04
mixture into this bowl
5:08
and half into this bowl right here
5:12
[Music]
5:16
okay so on this beef jerky i’m gonna add
5:18
some red pepper flake
5:20
just for a little bit of heat
5:24
just like that
5:26
so i’m going to mix this one up first
5:28
that way i don’t get red pepper flake
5:30
into this batch
5:31
mix it up really good
5:36
all right so i do have a ziploc bag here
5:39
i’m just gonna put this meat in there
5:43
now this is gonna refrigerate overnight
5:47
that way the meat takes on that
5:48
seasoning
5:50
and adds a ton of flavor
5:53
to your jerky
5:54
[Music]
6:02
all right let me mix this one up
6:05
the red pepper flake
6:07
so that’s the beauty of these kits
6:09
is that you have a base or a foundation
6:11
of flavor
6:13
and you can add to it if you want if you
6:14
want to add more black pepper
6:16
in this case i wanted some crushed red
6:18
pepper so i just added some into the mix
6:21
you do want to be careful if you start
6:22
adding
6:23
something too salty because you don’t
6:25
want your beef jerky to be extremely
6:26
salty
6:30
alright so same thing with this batch
6:32
right here
6:33
pop it inside a ziplock bag
6:38
look at the amount of crushed red pepper
6:40
that’s going to add some nice heat
6:43
to our beef jerky
6:45
[Applause]
6:48
all right so the next step is just to
6:49
close your ziploc bag
6:51
and try to remove as much air as
6:53
possible
6:56
close it up
6:57
again this is going to rest in my fridge
6:59
overnight
7:00
tomorrow morning we’ll pop them inside
7:02
my pk100 smoker stay tuned
7:05
all right so the beef jerky has been
7:07
sitting in our fridge overnight now it’s
7:09
time to go ahead and start cooking it
7:13
and i do have five racks here these
7:15
racks are off of my pk100 smoker
7:19
oh man it smells so good
7:21
and the beef jerky really absorbed
7:24
that liquid okay
7:25
so all i got to do now
7:27
is spread them out evenly
7:31
make sure they’re not touching each
7:32
other
7:35
look at that
7:37
that already looks good it’s not even
7:39
cooked yet
7:41
so as i mentioned earlier i’m going to
7:42
be smoking this beef jerky in my pk100
7:44
smoker
7:45
and when you do buy it you do get five
7:47
of these racks
7:49
so i should have enough room
7:52
for all of this beef jerky
7:54
just spread it out evenly and remember
7:57
that the beef jerky will shrink
7:59
to about half of this size
8:01
and that’s when you know it’s ready
8:05
so i’m going to continue to lay the beef
8:07
jerky out
8:09
and i’ll bring you guys right back
8:12
right so we’ve got four and a half racks
8:15
of the beef jerky
8:19
here’s my half rack
8:21
i’ve got my pk100 smoker running at 170
8:24
degrees
8:25
and on this cook i’m going to be using
8:26
this cherry sawdust from pia seasonings
8:29
again check out the links below
8:30
so you guys can get your beef jerky
8:32
supplies let’s head outside
8:35
all right so i’ve got my smoker loaded
8:36
with a beef jerky as you can see there
8:38
it’s already starting to smoke so i’m
8:39
going to shut the door
8:40
now this is going to cook between four
8:42
and seven hours at 170 degrees
8:45
i’ve got cherry sawdust so that’s going
8:47
to give us a really nice color and also
8:49
some really nice flavor to our beef
8:51
jerky i’ll bring you guys back in about
8:53
four hours stay tuned
8:57
all right so the beef jerky is ready and
8:59
the total cook time and the tk100 smoker
9:01
was six hours and 15 minutes
9:04
and this is what we’ve got right here
9:06
check it out
9:07
smells absolutely amazing
9:09
you just want to take them off
9:12
so we have some really nice thick pieces
9:14
in here
9:16
as i mentioned earlier that’s how i like
9:18
my beef jerky i don’t like my beef jerky
9:20
crunchy okay just take it off the rack
9:24
make a nice little pile right here
9:26
now if you see what looks like water or
9:28
moisture on the surface of your jerky
9:30
that’s not water okay that’s actually
9:32
fat
9:33
that’s rendered from the beef jerky just
9:35
grab a paper towel
9:37
and dry it off as you can see it’s it’s
9:39
fat it’s not water okay
9:41
[Music]
9:43
and here’s our crushed red pepper jerky
9:46
looking mighty fine
9:48
just gonna build a nice little stack of
9:50
them right here as well
9:53
and it smells absolutely amazing in here
10:00
all right i got a nice pile of this
10:01
delicious smelling beef jerky i’m going
10:03
to wash my hands take my thumbnail
10:05
picture we’ll come back for a taste test
10:07
all right let’s give this smoked cracked
10:08
pepper garlic beef jerky try i’m going
10:10
to try the pepper garlic by itself
10:12
without the red pepper flake and see how
10:14
we did
10:16
look at that
10:17
so this is when you know you have good
10:18
beef jerky is when it cracks but it
10:20
doesn’t break just like this okay see
10:23
how it cracked like that but it doesn’t
10:25
break
10:26
man this is going to be good here we go
10:34
so the cherry sawdust that we used in
10:35
the pk100 smoker not only gave the beef
10:38
jerky a nice red color but an amazing
10:40
flavor i’m picking up really good notes
10:43
of the pepper and very little garlic
10:45
okay it’s not extremely garlicky this is
10:47
really good
10:50
all right let’s give that crushed red
10:51
pepper jerky a try again same thing it’s
10:54
gonna crack but it doesn’t completely
10:55
break through that’s a perfect beef
10:57
jerky here we go
11:01
[Music]
11:03
all right so that crushed red pepper
11:04
beef jerky is absolutely delicious it’s
11:07
got the same baseline flavor but it’s
11:09
got some really nice heat coming from
11:11
those red pepper flakes so if you’re a
11:13
beginner at making beef jerky or an
11:14
expert i gotta tell you buying these
11:16
jerky kits from pia seasoning makes it
11:18
so easy to make some delicious beef
11:20
jerky
11:22
so this beef jerky right here is a
11:23
hundred times better than anything that
11:24
you can buy from the store it’s got so
11:26
much flavor really fresh and it doesn’t
11:29
taste like chemicals now you can store
11:30
this beef jerky inside your cabinets in
11:32
a ziploc bag for probably a month and a
11:34
half to two months if you put it in your
11:36
fridge it’s going to hold a little bit
11:37
longer but i doubt that this beef jerky
11:40
will last two months
11:41
i hope you guys enjoyed this video if
