How To Trim Meat For Making Jerky

when it comes to making jerky you always

want a really nice piece of lean meat my

go-to is always eye of round and i

always get choice cut you don’t want a

bunch of marbling when it comes to

actual jerky itself this is one of the

only times where fat actually doesn’t

equal flavor and to trim up this fat i’m

using my doll strungs because this is a

really nice sharp bony knife and it

works great for getting that silver skin

off just skim that knife right on the

inside cut one way and then you can come

the other way and that’s not a lot of

waste now i started out with just over

11 pounds and everything that i need is

right in this box from ps seasoning they

pounds is because i figured i’d trim off

about a pound of waste you don’t want

any of that stringy stuff stuck in your

teeth if it’s fibers of meat that’s

different so i have three of them done

and this is my pile that i’ve started so

far this one’s got a little bit more fat

just take your time when you’re doing

this try to get as much of this off as

you can these eye rounds are all trimmed

up now we got to put these on this wire

rack and we’re going to put them in the

freezer and cool them down for about an

hour and a half so it stiffens them up a

little bit so when it comes to actually

cutting out the slices it’s a lot easier

hour and a half now it’s time to go

ahead and slice it up and i’m using my

actual deli slicer to do this project

now you can use a sharp knife and go

ahead and cut them into quarter inch

strips if you want to i’ve got this

i’m going kind of the traditional way or

old school where they slice it with the

grain you can go across the grain and

you take that piece of jerky and you

pull off that big piece the grain is

running this direction so that’s the way

we’re going to put this in put a little

pressure on it not much but just a

and now we’re going to start to slice

this is a nice quarter inch and that’s

going to be a decent sized piece of

and then we’ll start making our marinade

our meat’s all sliced up now it’s time
Easy Way To Make Beef Jerky Marinade

to do our marinade in this box from ps

seasoning it’s giving us all the

measurements that we need for up to 15

pounds pop open the box get out our

seasonings but again we’re only doing 10

pounds so we only need two cures and two

seasonings this is our seasoning and

this is our jerky cure you need one cup

of cold water for each batch of five

pounds and we measured out two cups of

cold water start with our first pack of

seasoning get that in and they call this

one buttery prime rib jerky and i can

smell the butter get our next one in

just gonna add a little bit of water and

we’ll stir it up so it’s easier when we

mixed up now it’s time to get this meat

and a half gallon bag that i got and

our first step to making jerky is

actually we got to start drying it out

if you’re doing it on an oven you’re

going to want to make sure you get some

nice wire racks because this is going to

fall through on your oven the pk

stainless steel shelves are nice and

tight so we don’t have to worry about

first step for this pit is to actually

start drying the jerky we aren’t adding

any smoke yet but if you’re doing it on

a pellet grill well you’re going to have

smoke right out of the gate and if

not gonna have any smoke but that’s not

a big deal the smoke just adds a little

layer of flavor set our temperature

How To Smoke Beef Jerky

my hour and a half timer went off at 45

top down the bottom i’m gonna rotate

these racks again but we’re also going

to flip over each piece of jerky just

take this rack out flipping these over

because we want that juice to get off

from there this will help that drying

there’s obviously a lot of moisture on

here now that i have them all rotated

it’s time to put in our sawdust for our

smoke now you can see that i have a big

bag of sawdust and we’re not adding a

ton of smoke so we don’t need a ton of

sawdust but one thing you got to make

sure that you do is you get that sawdust

damp or it’s just going to burn up

quickly you want it to smolder now you

just want this sawdust nice and clumpy

just mix this sawdust up a little bit
